1 cup all-purpose flour (spooned and leveled)
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter
1 tablespoon vegetable oil
1 large egg
In a small bowl, whisk together flour, sugar, baking powder, and salt.
In a medium bowl, whisk together milk, butter, and egg. Then, add the dry ingredients to the wet ingredients. And, mix everything together.
Heat a frying pan over medium-high heat. Coat with a non-stick cooking spray, butter, or vegetable oil to prevent sticking.
Spoon the batter onto the pan and cook each side until it is golden brown. Use a spatula to flip the pancakes and to remove them when they are finished.
Serve immediately. Add fruit, maple syrup, whipped cream, or powdered sugar if desired.
